Kangaroo is something we usually cook up on our annual camping trip.. has become a tradition of sorts. Add a little spice mix, fire it up with our trusty Gasmate BBQ, bake some potatoes, and you've got the perfect campfire meal.

Kangaroo tail soup is a favourite. Here's the recipe. All you need is 3 Hoppers.
  • 3 Kangaroo tails
    • Pinch Kuccura
    • Pinch Tananmi apple
    • Pinch Pepper berry
    • Pinch Pepper leaf
    • Pinch Mountain Pepper
    • 4 Carrots chopped
    • 1 Celery chopped
    • 1 Parsley bunch (fresh)
    • 2 litres Beef Stock

    Method
    • 1.

      Cut kangaroo tail.

    • 2.

      Place the kangaroo tail in the pan and fry.

    • 3.

      Fry the garlic, onion, then add the carrot and celery.

    • 4.

      Add a subtle amount of bush spices, try to be moderate with them.

    • 5.

      Let this simmer, then add the tomato paste and red wine right at the very end.

    • 6.

      Serve this dish with damper or bread.

Does Kangaroo have a lot of the "Wild" taste to it as Deer meat would? We usually soak deer meat in Pepsi or Coke To remove the wild Taste, However, Warm saltwater actually do a better job.

Can be gamey SP. The guy up the road gave me some Wallaby fritters he made , they were purple so I gave them to my dog and she threw them up. A lot of people here use it for dog meat but the local shops sell it for human consumption but it isn't cheap to buy unless you go out and get some yourself. I get deer here when its in season, family go hunting for them and that as you say is also gamey bit strong for some people. I only eat a bit of it.

Aborigines in the bush here just chuck the entire Kangaroo onto an ope fire and cook it that way they don't skin or gut them.

My uncle used to be obsessed with Hawaii and those Hula Barbecue parties, He would often Roast a whole pig in this exact same way. I admit Pig, Cooked this way is delicious :) See the skin, Will allow for the flavors in the meat to not evaporate away, It's kind of like when we cover ribs or steak in tin foil before we bake it, The meat will be absolutely spectacular when cooked this way.
